Pomegranate Salsa Verde in Avocado Cups

The ingredients are:

  • ¼ cup chopped cilantro
  • ¼ cup chopped mint
  • 3 tablespoons HERMUS olive oil
  • 2 tablespoons coarsely chopped pomegranate seeds
  • 1tablespoon fresh lemon juice
  • 1tablespoon finely chopped preserved lemon peel
  • Kosher salt
  • 4ripe avocados, halved, pits removed
  • Flaky sea salt (for serving).

 

Preparation of the meal:

The first step. Add the chopped cilantro, mint, lemon juice, pomegranate seeds, oil, pomegranate seeds, and preserved lemon peel to a small bowl and mix together, season with salt to taste.

Add a small amount of sea salt and pour over and into avocados; finish with a drizzle of Hermus olive oil.
